イッセイミヤケ 水を味わう 水を纏う“Savor water, Embracing water”

人と水、食の関係にフォーカスした料理家・横山夫紀子と、生命力満ちた横山の料理を撮影し続けた写真家・秋元茂。彼らの共著書『百味菜々』に収録された写真とともに、身体と水の存在を新しいアングルから体感する企画展のために、Olfactive Studio Neは香りのパートを担当。
料理のおいしさと美しさは準備の過程、つまりは“こしらえ”から生まれると理解し、出汁に使われるコンブと旬の素材(ふきのとう、みょうが)を水蒸気蒸留水で抽出。
会場エントランス付近ではあいまいで抽象的な香りを空間に漂わせつつ、展示室内に入っていくと、素材とともに蒸留水を見せることで、より具体性のある素直な香りを提示。香りで来場者の想像力を掻き立てるプランニングを行った。
Fukiko Yokoyama is a specialist chef focusing on relationships between people, water and dining. Photographer Shigeru Akimoto captures the fullness and vitality of her dishes. The exhibition was planned to complement Yokoyama and Akimoto’s co-authored book Hyakumi Saisai (Vegetables with a hundred tastes). It explores the body and water from new angles. Olfactive Studio Ne was commissioned to provide accompanying scents.
In order to appreciate how the beauty and refined taste of Yokoyama’s cookery derive from careful preparation, we extracted flavours of konbu (kelp) and seasonal ingredients like butterbur shoots and myoga ginger, by steaming in distilled water.
We released an ambiguous and abstract fragrance at the exhibition entrance, but as visitors went inside, more concrete and straightforward scents were offered, coupled with visual presentations of the ingredients and distilled water. Scents were used to arouse the imagination.
